Spring Salad

I have foraged for wild food since I was a child. My grandparents who were Austrian had a rich heritage of knowing local foods.


This is a homemade salad made with dandelion greens/flowers, white violet and forsythia flowers. These are all harvested in early spring and they pack in extra phytonutrients plus add flavours. Dandelion flower heads can also be used to make fritters and for flavoured honey.


Please do your own research before eating wild flowers and be sure to identify what you have foraged safely. Also always ensure that anything you forage has not been sprayed with insecticides or pesticides and is gathered responsibly.
