Buckwheat porridge

Soak 1/2 cup whole quinoa and 1/2 cup buckwheat in water overnight. I add a bit of lemon juice and some cinnamon powder in the soak with water. Then rinse them off next morning.


Heat 3 tpsns coconut oil, added some sliced ginger root and fry it off.

Add quinoa and buckwheat and 2 cups water - bring to the boil, and then simmer for about 20 minutes, with a stick of cinnamon. At 15 minutes until the end of the cooking time add a handful of dried mulberries and a splash of plant milk.

Also if you have any leftovers you can use it at lunch with savoury accompaniments even with the cinnamon.
