Dandelion Salad with Warm Hazelnut Vinaigrette
This is a lovely springtime salad. Dandelion greens need to be weedkiller free and uncontaminated. Dandelions are rich in nutrients including vitamin C. Ingredients 2 large bunches dandelion greens 2 tablespoons olive oil 2 cloves garlic, minced (optional) 1/4 cup hazelnuts (or walnuts), coarsely chopped 1 tablespoon balsamic vinegar Sea salt and pepper to taste Method Wash the greens and chop into 1 inch pieces. Spelt Scones
Ingredients 1.5 cups organic spelt flour 1 cup plain bio yoghurt or sour cream 1 cup grated cheese (I use a lovely small farm cheddar) A pinch of bicarbonate of soda A couple of teaspoons of dried herbs (or a tablespoon of fresh) Method Sieve the flour and bicarbonate into a mixing bowl and mix well together. Add the herbs and grate the cheese into the mixture too. Mix in your yoghurt or sour cream. I pour the whole mixture into a Pyrex dish and then bake for about 20 minutes
