Easy Butter Bean Salad

Beans have been shown to be an important longevity food in cultures where people live into their senior years in good health. They contain protein, antioxidants, soluble fibres which act as prebiotics for beneficial gut bacteria as well as key micronutrients like magnesium. This can be eaten as a side dish or makes a meal in itself.


Ingredients


1 can of butter beans

1 large beef tomato (big and beefy to cut into)

1 medium sized courgette (zucchini)

Juice of half a lemon

Tablespoon of olive oil.

Herbs such as basil and parsley


Method

Cut courgette into zoodles (noodles made with a peeler - leave skin on).

Chop and dice the tomato.

In a small jug mix the lemon juice with the herbs and olive oil.

Combine all ingredients together in a bowl.
