Healthy Eating for Students

This was made by my daughter. She is a student and thankfully knows about ensuring she eats in a healthy way that is affordable.
As well as vegetables for a rainbow of micronutrients and fibre this has tofu and quinoa, both of which give protein. She has also added some raw kimchi.
